Choc Chip Protein Cookies
Ingredients:
- 1 cup almond meal
- 1 tbs collagen (optional) or add extra almond meal
- 2 scoops of protein powder (I use a Vanilla pea protein)
- pinch salt
- 1.5 tbsp cacao nibs
- 1/3 cup melted coconut oil
- 1/4 cup rice malt syrup (or maple syrup)
- handful of dark chocolate chips (I use 72% choc chips)
Method:
- Add almond meal, collagen powder, protein powder and salt into a bowl and stir to remove lumps (I use a whisk).
- Add coconut oil and sweetener to the dry mixture and stir to combine.
- Add cacao nibs and choc chips and stir to combine.
- Line a baking tray with baking paper (I use a silicone baking mat) and roll cookie mixture into balls and flatten. We make approx. 16 cookies with this mixture.
- Bake in the oven at 180 deg for 10 minutes.
- Enjoy! These last for up to one week in a sealed container.
