Raw Chocolate Slice
INGREDIENTS
Base:- 1 cup medjool dates seeds removed
- 1 cup raw cashews
- 1⁄2 tsp vanilla
- pinch sea salt
- 1⁄4 cup nut butter I used peanut butter) to spread on top of base
- Extras: cacao nibs dried cranberries, seeds, nuts (I used cacao nibs) etc.
- 1 cup cacao powder
- 1 cup coconut oil
- 1⁄4-1⁄3 cup sweetener (honey, maple syrup, rice malt syrup)
- pinch sea salt
METHOD
- Put all of the ingredients for the base in a high speed blender and mix until it is a fine crumb and is sticky.
- Pour mixture into a tray and press it down so it is flat to form the base layer of the slice.
- Spread over a layer of nut butter, sprinkle any extras (I use cacao nibs for crunch) and place in the fridge to set while you prepare the chocolate layer.
- Combine all of the ingredients for the chocolate layer until it is a smooth mixture with no lumps.
- Pour mixture over base and leave to set in the fridge for a couple of hours.
