Vegan Tacos
We had this mid week meal for the first time this week and WOW! So yummy!
Everyone in my house gave it the tick of approval and it is the perfect mid week meal as it is quick to pop together.
I served the taco meat and cheese sauce on a platter (grazing board style) with a selection of fresh toppings: avocado + lettuce + grated carrot alongside the taco shells.
Cauliflower walnut vegetarian taco meat recipe
Ingredients:
- 3 cups of cauliflower florets
- 2 cups of whole walnuts
- 2 individual chipotles in adobo sauce
- 1 tbs chili powder
- 1 tsp cumin
- 1 tsp salt
- 2 tbs of lime juice
- 1/2 tsp of garlic or onion powder
- a pinch of cayenne for more heat
- Preheat the oven to 190oC. Pulse all ingredients in a food processor until the mixture is evenly ground.
- Transfer to a greased baking sheet. Bake for 30 minutes, stirring halfway through to prevent over-browning.

Ingredients:
- 2 cups of water
- 2 cups of peeled and chopped rustic potato
- 1 cup of chopped carrot
- 1 large yellow onion approx 2 cups
- 3 garlic cloves peeled and chopped (1 tbsp)
- 1/2 cup of raw cashews
- 1/2 cup of nutritional yeast
- 1 tsp of paprika
- Hot sauce to taste
- 1 teaspoon salt (or mushroom salt is next level)
Instructions:
1. In a large pot sautee onion, paprika and garlic with a bit of water of olive oil for 5 minutes, and then add carrots, potatoes and 2 cups of water and simmer until vegetables are soft (approx 20 min).
2. After vegetables are soft, pour everything into to your blender including cashews, nutritional yeast and salt.
3. Blend on high until the sauce is creamy and smooth, about 2 minutes.
4. Add black pepper and salt and hot sauce to taste.
* You can add a jalapeno or swap chili powder for paprika for a flavourful twist and or fresh add cilantro for an additional burst of flavour!
Use this as a mac and cheese sauce, a nacho dip, a salad dressing, on top of streamed broccoli or cauliflower, baked potatoes or as a ‘cheese’ fondue...s o many yummy options.
